Boxboles

My life can get pretty hectic with all the hats I have to wear and juggle.  So it wasn’t a surprise when I realized we were eating out way too often.  Having to clean up a mess after making a meal turns me off.  I’m messy, I use way more dishes and utensils than probably most when preparing food.  But I do love to follow recipes.  The other day while shopping at Walmart, I was excited to see the new Palmolive® Fusion Clean™ dish liquid that combines Baking Soda with the fresh scent of Lime or Grapefruit.  The scent of lime and grapefruit is so modern, I thought, if this helps make my cleaning up less time consuming, lets get cooking then!

When I read, Palmolive® Fusion Clean™ dissolves and loosens 24-hour stuck on food, I thought, “this is for me!”  I want to start cooking more at home and I remembered a delicious meal my mom would make for us called Boxboles, pronounced Boshboles.  My mom is from Guatemala and she told me that this recipe was handed down from the indigenous population of Guatemala to my grandmother and to her.  When I was a child my mom would make these Boxboles for special occasions and I remember when she’d announce, “Voy a cocinar boxboles”, my mouth would begin to water with anticipation.  It’s such a deliciously simple dish yet I had never made it before.   I thought it would be too hard and too messy.  I finally faced the challenge and asked my mom to show me how to make them.

Passing the Knowledge - Motherhood Full of Dreams

Here are the Ingredients you will need:

  • 2 cups of Corn Flour
  • A bunch of Chard (A leafy green vegetable)*
  • 4 cups of water (2 cups mixed in with Corn Flour/2 cups to boil boxboles)
  • 1/3 cup of butter
  • salt and pepper to taste
  • Limes

*If you can’t find Chard leaves as it is hard to find in some supermarkets, you can also try Bok Choy leaves.  Look for a large leafy vegetable that has vein like linings in the middle.  For my first attempt I bought both, Chard and Bok Choy and they both worked well.

Finally after all these years, I was going to attempt to make Boxboles and not let the fear of clean up or mess hold me back!  I couldn’t wait to finally prepare this dish after eating it for so many years and sharing it with my family.

Follow these steps:

  1.  Pour 2 cups of corn flour into a bowl
  2. Slowly add 2 cups of water to your corn flour and mix it in with your hands making it a doughy consistency.
  3. Add 1/3 cup of butter and add salt and pepper to taste
  4. Once you’ve mixed up your dough really well, it’s time to put it into the washed chard leaves.  You don’t want to add too much of your corn flour dough, do not make them thick, these are not tamales, just a small sliver of your dough is enough.
  5. Wrap the Chard around the corn flour dough mixture tightly.  See picture below in step 5 and then then place them in a pot.
  6. Add 2 cups of water, set to medium high heat and let boil for 25 minutes covered.

They are so delicious.  Some people add a tomato sauce to it, or tomatillo verde sauce, hot sauce or any sauce you please.  Give this easy recipe a try and let me know how much you love this.  You’ll also appreciate how easy the clean up is with Palmolive® Fusion Clean™ Dish Liquids.
